Banana bread

  1. Preheat oven to 350 degrees.

  2. In a large mixing bowl:
    1. beat one or two eggs,
    2. blend in 2/3 c. sugar, 1/3 c. melted margarine, and 3/4 tsp. grated lemon rind,
    3. mash in two ripe bananas, and
    4. stir in 1/2 c. broken pecans or walnuts.

  3. In a separate mixing bowl, sift together:
    1. 1 3/4 c. flour,
    2. 2 1/4 tsp. baking powder, and
    3. 1/2 tsp. salt.

  4. Combine the ingredients from the two mixing bowls, and place the batter in a loaf pan, a couple of small loaf pans, or in muffin molds.

  5. Place a few whole pecans or walnuts on the top surface(s).

  6. Bake until a toothpick comes out clean – about an hour if baked as a single loaf.
