Batatas com coentro
Batatas com coentro (potatoes with cilantro)
This is a very simple but remarkably tasty Iberian dish.
Ingredients:
- small red potatoes
- cilantro
- olive oil
- coarse-ground pepper
- coarse-ground salt
What to do:
- Set the oven to 400 degrees.
- Clean the potatoes and cut them in half.
- Rub them liberally with olive oil.
- Bake at 400 degrees for 25 minutes.
- While the potatoes bake, clean the cilantro and tear the leaf clusters off.
- After the potatoes are removed from the oven, add some more olive oil to a cast iron skillet and bring it to a high temperature.
- Put the potatoes in skin side (outside) half down.
- While they’re browning on that side (it will only take a minute):
- Grate (on a very coarse setting) pepper and salt onto the cut (flat) side which is now facing up.
- Liberally sprinkle the cut sides with cilantro.
- Turn the potatoes over onto the cut side (the cilantro will crisp up, or burn, but that’s OK).
- Remove and serve as soon as they've browned (it will only take a minute).
