Melissa's killer bean dip
Simple but satisfying.

Vegetarian: lacto-ovo (vegan without the cheese)
Here's what you need from the store:
- a __ oz. jar of Arriba chipolte hot sauce
- 2 one pound cans of refried beans
- a medium red onion
- a jar of pickled jalapeno peppers
- some sharp cheddar cheeze (Cabbot makes a wonderful white cheddar that really is sharp, unlike most things that pass for "sharp" cheddar)
And here's what to do:
- combine the beans and the chipolte sauce in a big saucepan
- chop the red onion and peppers fairly small and add them to the saucepan
- warm slowly and cook over a very low heat until the onions are soft
- sprinkle cheese on top when serving
