Tanmoy’s chutney

This is a version of the green dip you're given with crisp breads before dinner at Indian restaurants. I got this from Tanmoy Kumar, who grew up in India.

  1. Combine the following in a blender:
    1. 1 bunch of cilantro
    2. 3 Roma tomatoes
    3. 3 jalapenos (seeded or not depending on how hot you want it)
    4. juice from 2 lemons
    5. 1T sugar (or some fruit juice)
    6. 1T salt

  2. Pulse a few times to partially puree everything.

  3. Add about 1/2 cup water (or juice) to make it less thick and finish blenderizing the mixture.

  4. Also, either finely chopped at this point or add prior to blending above:
    1. the cloves from a bunch of garlic
    2. onion

    3. and, maybe, 1T ketchup.
