Not-so dirty rice
This is a try at vegetarian "dirty" rice, which is normally white rice cooked with meats and some vegetables.
What you need (organized by the order in which you use them while cooking this):
- a pan to brown "sausage" and veggies in
- a bigger pot to cook the rice in
- ~1 3/4 c. vegetable stock
- 5 Boca Breakfast Sausages ($3.05 for 10 at H.E.B. in Bryan, Texas, circa September 2010).
- 1 c. rice
- 1 3/4 c. water
- ~1/2 c. diced onion
- ~1/2 c. diced or sliced celery
- ~1/2 c. diced bell pepper
- ~1/2 a bunch of garlic, diced
- ~1 T. crushed red pepper
- ~1/2 t. salt
- ~1 t. ground cumin
- ~1 t. ground oregano
What to do:
- Prepare the stock (if necessary, e.g. if it's from boullion).
- Brown the sausage in some margarine for a minute.
- Add the rice and stir-fry it briefly the way you would stir-fried rice (for a couple
of minutes).
- Add the following veggies and continue to stir-fry briefly:
- onion,
- celery,
- bell pepper, and
- garlic.
- Add the following:
- the vegetable stock.
- pepper
- salt
- cumin
- oregano
- Cover and cook until the rice is done (not very long!).
