A simple quiche

This is descended from The Joy of Cooking, which my mother gave me in 1976.


What you need:


Preparation:

  1. Pull a refrigerated pie crust from the fridge.

  2. Set oven to 450 degrees and put the cookie sheet on a lower shelf.

  3. Start a couple of strips of "bacon" crisping.

  4. Clean and slice mushrooms.

  5. Dice up more than a half cup of cheese(s).

  6. Spray the pie pan with oil and spread out the pie crust in it.

  7. Break 2 eggs into a bowl and brush the pie shell with the white of the eggs.

  8. Scald 2 c. milk or cream.

  9. Beat the following into the milk/cream to make the custard:
    1. the eggs
    2. 1/4 t salt
    3. 1/8 t pepper

    4. pinch of nutmeg
    5. 1 t chopped chives

  10. Arrange diced cheese, "bacon," mushrooms (&c.) in bottom.

  11. When the oven is heated, pour in the custard mix.

  12. Put the quiche on a shelf above the cookie sheet (in case of a spill) and bake 35-40 minutes.
