A simple quiche
This is descended from The Joy of Cooking, which my mother gave me in 1976.
What you need:
- A pie pan and (in case of a spill) a cookie sheet to put under it in the oven
- Pillsbury refrigerated pie crust
- Solid fillings:
- swiss and/or sharp cheddar cheese
- mushrooms
- MorningStar Farms (or other) "bacon"
- and/or other stuff
- 2 c milk or cream
- spices:
- salt and pepper
- nutmeg
- a teaspoon or so diced chives
Preparation:
- Pull a refrigerated pie crust from the fridge.
- Set oven to 450 degrees and put the cookie sheet on a lower shelf.
- Start a couple of strips of "bacon" crisping.
- Clean and slice mushrooms.
- Dice up more than a half cup of cheese(s).
- Spray the pie pan with oil and spread out the pie crust in it.
- Break 2 eggs into a bowl and brush the pie shell with the white of the eggs.
- Scald 2 c. milk or cream.
- Beat the following into the milk/cream to make the custard:
- the eggs
- 1/4 t salt
- 1/8 t pepper
- pinch of nutmeg
- 1 t chopped chives
- Arrange diced cheese, "bacon," mushrooms (&c.) in bottom.
- When the oven is heated, pour in the custard mix.
- Put the quiche on a shelf above the cookie sheet (in case of a spill) and bake 35-40 minutes.
