Tasty tofu strips
Many people have asked me how I make these tofu strips, which are kinda
like chicken. The trick is to find really firm tofu and then cook
the shit out of it over 20 minutes or so, in a goodly amount of
margarine, flipping the slices frequently.

Here's what you need:
- a 12 ounce package of extra firm "Tasty Tofu" (it used to
be that you could only find "Tasty Tofu" at the Oriental Market on Texas Avenue,
but now The Farm Patch also has it)
- a stick of margarine
- a thick, heavy, and well-seasoned cast-iron type cooking plate
And here's what to do:
- cut the tofu into slices about 1/3 inch thick
- heat the cast iron cooking plate thoroughly
- rub the stick of margarine all over it (be pretty liberal with the margarine)
- put the slices of tofu on
- when the slices have cooked just a little bit, turn them over, applying a good bit more margarine when you do
- when they have cooked just a little bit on the other side, turn them again
- keep turning them fairly frequently (although you can quit adding margarine)
- continue until the tofu slices are quite brown and crispy on both sides
- remove and cool the tofu
- cut the slices into strips about 1/3 inch wide
